Jícama is a remarkably healthy and (in my opinion) under eaten vegetable! Jícama is a (basically) flavorless root vegetable with a wonderful texture. Zoodles are a staple in my diet and I love switching up the texture of them. These ribbon zoodles taste just as good and simply use a different technique to cut them.

Zoodles hold a special place in my heart, as you can imagine from the title of my blog. My favorite way to eat them is with freshly made pesto and tomatoes. Oh my nom!

This Caesar Salad is pretty much the only salad I ever eat. I love it so much I perfected a much smaller (lower calorie) version of it. This is a staple in my diet – I never get sick of it.

In case you don’t know, Zoodles = Zucchini Noodles! They are one of the best foods I was introduced to ever since going gluten free. You can substitute zoodles in any recipe where you would normally use pasta for a much more nutritious (& lower calorie) option!

One of my all time favorites! The reason you do not see many salad dressing recipes on my site is because this is the only one I ever make! If you have never made a homemade Caesar dressing before you do not understand the amazingness you are missing out on. I make this salad weekly.

Cauliflower rice is a wonderful side dish, but from time to time I get really sick of it. When I am not in the mood for cauli rice, parsnip rice is the perfect alternative! It has a fairly neutral flavor and basically just tastes like whatever you season it with.

Paleo breads are a huge treat for me and I try to stay away from them as much as possible. This focaccia, however, uses minimal “flour” and still has the texture of bread! This is the perfect recipe for when you are missing bread or entertaining guests. My favorite way to eat it is with Bruschetta.

This dish was a happy accident. I was actually making a big frittata, but the fillings looked so good together I decided to eat it as pasta instead! Yum.

This is the best veggie burger! Not only is it paleo, but it has the perfect texture. I was eating these before I was even paleo and make a batch almost every week!

If you have not tried Brussels with honey you do not understand what you are missing! I am not even a big fan of Brussels Sprouts, but this version is one of my favorite side dishes!
