In case you don’t know, Zoodles = Zucchini Noodles! They are one of the best foods I was introduced to ever since going gluten free. You can substitute zoodles in any recipe where you would normally use pasta for a much more nutritious (& lower calorie) option!
Pictured above topped with Rao’s Tomato Basil pasta sauce (available at most grocery store), but you can use absolutely anything.

Ingredients
- 1 medium zucchini
- sea salt, to taste
- fresh pepper, to taste
- any toppings you like - sauce, olive oil, fresh or dried herbs, vegetables...
Instructions
- Use your spiralizer, mandoline slicer, or julienne peeler to cut the zucchini into zoodles.
- Put the zoodles in a pot with about a tablespoon of water, cover, and cook over medium heat for about 5 minutes. Season with salt, pepper, and any other toppings.

Instead of cooking on the stove you can also microwave the zoodles for about 90-120 seconds. Watch closely the first time you make them since all microwaves are different and you do not want them to get soggy.
