Paleo Gummies

Ingredients
- Blueberry:
- 1 cup fresh blueberries
- juice of 1 lemon or lime
- 1 cup of water
- 3-4 tbsp grass fed gelatin
- optional: 1 packet of stevia or 1 tbsp raw honey
- Strawberry-Orange:
- ½ lb strawberries, diced
- ½ cup fresh squeezed OJ
- 3-4 tbsp grass fed gelatin
- Chocolate Almond Milk:
- 1.5 cups Chocolate Almond Milk - Add extra cacao and sweetener. The almond milk gummies have a tendency to taste a bit bland.
- 3 tbsp grass fed gelatin
- Vitamin C:
- 1.5 cups fresh squeezed orange juice
- 3 tbsp grass fed gelatin
Instructions
- Blueberry:
- Put the blueberries and water in a small pot. Cook for about 7-10 minutes over medium heat, or until the blueberries are very soft and starting to open.
- Place a fine wire mesh strainer over a bowl and pour the blueberry mixture through. Press all the blueberries against the strainer to make sure you get all the juice.
- Return the strained juice back to the pot, add the lemon and sweetener (optional) and re-heat for a minute over medium heat.
- Once bubbling around the edges, turn the heat down to medium-low and slowly add the gelatin while whisking vigorously, continue whisking until it is all dissolved. This usually takes me 3 or 4 minutes.
- Pour the liquid into a silicone mold, mini muffin pan, or baking dish. Put in fridge and let set for at least two hours.
- Strawberry-Orange:
- Place the strawberries and OJ in the blender. Blend for about 30 seconds, or until very smooth.
- Put the mixture in to a pot (with the sweetener, optional) and heat over medium heat for about 5 minutes, or until it starts bubbling around the edges.
- Over medium-low heat, slowly add the gelatin while whisking vigorously, continue whisking until it is all dissolved. This usually takes me 3 or 4 minutes.
- Pour the liquid into a silicone mold, mini muffin pan, or baking dish. Put in fridge and let set for at least two hours.
- Chocolate Almond Milk:
- Heat the milk over medium heat for about 5 minutes, or until it is very hot and starting to bubble around the edges.
- Over medium-low heat, slowly add the gelatin while whisking vigorously, continue whisking until it is all dissolved. This usually takes me 3 or 4 minutes.

- Pour the liquid into a mold, mini muffin pan, or baking dish. Put in fridge and let set for at least two hours.
Notes
You can make these with anything: any fruit, Kombucha, fruit juice, almond milk, coffee...Keep in mind if you heat Kombucha you are destroying all the beneficial bacteria.
I find that for every 1.5 cups of liquid you need about 3 tbsp of gelatin.
