Put the blueberries and water in a small pot. Cook for about 7-10 minutes over medium heat, or until the blueberries are very soft and starting to open.
Place a fine wire mesh strainer over a bowl and pour the blueberry mixture through. Press all the blueberries against the strainer to make sure you get all the juice.
Return the strained juice back to the pot, add the lemon and sweetener (optional) and re-heat for a minute over medium heat.
Once bubbling around the edges, turn the heat down to medium-low and slowly add the gelatin while whisking vigorously, continue whisking until it is all dissolved. This usually takes me 3 or 4 minutes.
Pour the liquid into a silicone mold, mini muffin pan, or baking dish. Put in fridge and let set for at least two hours.
Strawberry-Orange:
Place the strawberries and OJ in the blender. Blend for about 30 seconds, or until very smooth.

Notes
You can make these with anything: any fruit, Kombucha, fruit juice, almond milk, coffee...Keep in mind if you heat Kombucha you are destroying all the beneficial bacteria.
I find that for every 1.5 cups of liquid you need about 3 tbsp of gelatin.
