This is my favorite way to prepare fish when I am in the mood for something a little different. If you have kids (or anyone) who is not crazy about fish this is a great recipe for them! For an even more kid-friendly version the fish can easily be turned into little fish sticks.
Sautéed Spinach
Spinach is probably my favorite vegetable – I just cannot get enough of it! After trying out many different recipes and variations, I realized the simpler the better.

Plantain chips are the perfect snack or party dish! All the ones I find in the stores are very good, but unfortunately I have yet to find a brand that does not use vegetable oil or canola oil. The good news is…they are so easy to make yourself and taste even better!
