Jícama is a remarkably healthy and (in my opinion) under eaten vegetable! Jícama is a (basically) flavorless root vegetable with a wonderful texture. It is low in calories, high in fiber, and has a very low glycemic index. The fiber in jícama is filled with oligofructose inulin, which increases the absorption of calcium from other foods, helps…

Zoodles are a staple in my diet and I love switching up the texture of them. These ribbon zoodles taste just as good and simply use a different technique to cut them.

Zoodles hold a special place in my heart, as you can imagine from the title of my blog. My favorite way to eat them is with freshly made pesto and tomatoes. Oh my nom!

This Caesar Salad is pretty much the only salad I ever eat. I love it so much I perfected a much smaller (lower calorie) version of it. This is a staple in my diet – I never get sick of it.

In case you don’t know, Zoodles = Zucchini Noodles! They are one of the best foods I was introduced to ever since going gluten free. You can substitute zoodles in any recipe where you would normally use pasta for a much more nutritious (& lower calorie) option!
