White sweet potatoes are the best! They are slightly less sweet than typical sweet potatoes, but still have much more flavor than standard potatoes. These make the perfect side dish to almost any entrée and can be seasoned with anything you like!
Roasted White Sweet Potatoes

Ingredients
- 1 large white sweet potato, peeled
- 1 tbsp coconut oil, melted
- a sprinkling of sea salt
- a sprinkling of fresh pepper
- any other dried or fresh herbs you like, optional
- parsley, for garnish, optional
Instructions
- Preheat oven to 425F.
- Dice the potato.
- Mix all ingredients in a bowl.
- Place the potatoes on a parchment lined baking sheet.
- Bake for 35-40 minutes, or until soft and partially browned. Toss the potatoes every 15 minutes while in the oven so they get evenly browned.
