One of my all time favorites! The reason you do not see many salad dressing recipes on my site is because this is the only one I ever make! If you have never made a homemade Caesar dressing before you do not understand the amazingness you are missing out on. I make this salad weekly.
Paleo Caesar Salad

Serves: 6
Ingredients
- 3 heads romaine lettuce, chopped
- anchovies (2), chopped, optional
- 1 tbsp fresh garlic, minced
- 1 tbsp Annie's organic dijon
- ½ tbsp worcestershire sauce*
- 1 egg yolk
- ½ cup extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tbsp red wine vinegar
- fresh pepper, to taste
- Croutons, optional
Instructions
- Place anchovies (optional), dijon, and fresh garlic in a large bowl. Mix with a fork.
- Add the egg and worcestershire and mix with the fork.
- Slowly add the olive oil while stirring with the fork. The dressing will thicken up here.
- Add the lemon juice, vinegar and fresh pepper. Mix with the fork.
- Mix in the lettuce.
Notes
*I still use Lea & Perrins original worcestershire sauce. It is gluten free, but does contain added sugar/molasses. Since this recipe uses such a small amount I do not worry about it. Here is a 100% Paleo/Whole30 option.
This dressing contains raw egg and should be consumed within 24-48 hours.
For a lower calorie version: Cut the olive oil in half, use a small egg yolk, a whole small lemon (juiced), a little less than ½ tbsp worcestershire and about ½ tbsp red wine vinegar.
