Angel Hair Sweet Potato Pasta with a Savory Sage Sauce

Ingredients
  • 1-2 tbsp ghee (Vegan: use extra virgin olive oil)
  • 1 large sweet potato
  • a sprinkle of onion powder
  • a sprinkle of garlic powder
  • a sprinkle of sea salt
  • a very generous sprinkling of dried or fresh sage
Instructions
  1. Cut the sweet potato into noodles. I use a julienne peeler. A spiralizer or mandoline slicer would also work well.
  2. In a medium saucepan, melt the ghee for a minute over medium heat.
  3. Add the rest of the ingredients and cook for about 10 minutes. Keep stirring so they cook evenly and do not burn.
  4. Optional: top with a fried egg.

Zoodle Guide Main Final Did you know you don’t have to have a spiralizer to make Zoodles? Read on for the Pros and Cons of each method. Pictured above (from top to bottom): Julienne Peeler, Mandoline Slicer, Spiralizer.

Zoodles Julienne Julienne Peelers are a great option if you don’t have a lot of storage space in your kitchen or you just do not want another kitchen machine. I love using a Julienne Peeler for Zoodles! They provide the thinnest texture that is closest to angel hair pasta. The only con is it takes a bit longer to do, so if you are going to be zoodling more than one zucchini at a time you may want to try a different option.

Zoodles Mandoline The mandoline slicer is my favorite method. Just slide the zucchini lengthwise and voilà – zoodles! It is easy, fast, and provides 3 (very different) noodles depending on the blade you use. The downside to this option is that mandolines are very sharp, so I would not let kids use this. The ribbon zoodles are great if you make lasagna.

Zoodle Spiralizer Spiralizers are easy, fast, and kid friendly! Personally, I find the texture of zoodles from a spiralizer to be a tad thick for me, but this is the easiest method. The only other downside is that this kitchen gadget takes up a lot of cupboard space!

Ribon zoodles use Zoodles are a staple in my diet and I love switching up the texture of them. These ribbon zoodles taste just as good and simply use a different technique to cut them.

Ribbon Zoodles

Ingredients
  • 1 medium zucchini
  • sea salt, to taste
  • fresh pepper, to taste
  • any other toppings you like - tomato sauce, olive oil, pesto, vegetables..., optional
Instructions
  1. Using a mandoline slicer with the flat blade, cut the zucchini holding it lengthwise (pictured below).
  2. Put the zoodles in a pot and cook for 5 minutes, covered, over medium heat, or until they have softened.
  3. Season with salt and pepper and add any other toppings.
Notes

Instead of cooking on the stove you can also microwave the zoodles for about 90-120 seconds. Watch closely the first time you make them since all microwaves are different and you do not want them to get soggy.

Pesto Zoodles Zoodles hold a special place in my heart, as you can imagine from the title of my blog. My favorite way to eat them is with freshly made pesto and tomatoes. Oh my nom!

Pesto Zoodles

Ingredients
  • 1 medium zucchini
  • sea salt, to taste
  • fresh pepper, to taste
  • Artichoke Pesto
  • cherry tomatoes, whole or diced
  • fresh basil, optional
  • any other vegetables or toppings you like, optional
Instructions
  1. Use your spiralizer, mandoline slicer, or julienne peeler to cut the zucchini into zoodles.
  2. Put the zoodles in a pot, cover, and cook over medium heat for about 5 minutes. Season with salt, pepper.
  3. Top with pesto (warmed), tomatoes, basil (optional) and anything else you like.

Marinara Zoodles In case you don’t know, Zoodles = Zucchini Noodles! They are one of the best foods I was introduced to ever since going gluten free.   2. Put the zoodles in a pot with about a tablespoon of water, cover, and cook over medium heat for about 5 minutes. Season with salt, pepper, and any other toppings.

Savory Vegetable Pasta This dish was a happy accident. I was actually making a big frittata, but the fillings looked so good together I decided to eat it as pasta instead! Yum.

Savory Vegetable Pasta 2

Savory Vegetable Pasta

Ingredients
  • 2-3 tbsp ghee or coconut oil
  • 1 tbsp garlic, minced
  • a generous sprinkling on onion powder
  • a generous sprinkling of dried or fresh thyme
  • a generous sprinkling of dried or fresh basil
  • ½ lb of mushrroms, chopped
  • 6 oz bag of spinach, chopped
  • 1 medium zucchini, cut into zoodles*
  • 3 tbsp Artichoke Pesto
  • sea salt, to taste
  • fresh pepper, to taste
  • cherry tomatoes, optional
Instructions
  1. Sauté the garlic and onion in ghee (or coconut oil) for 1 minute over medium heat.
  2. Add the thyme, basil, and mushrooms. Cook for 5 minutes.
  3. Add the spinach, zoodles, pesto, salt, and pepper. Cook for another 5 minutes, or until the spinach has wilted and the zoodles are soft.
  4. Optional: add the cherry tomatoes.
