Almond Milk TEXT

almond milk plain

Basic Vanilla Nut Milk
Author: 
Serves: Makes about 5 cups
 
Ingredients
  • 1 cup raw almonds*, cashews or hazelnuts
  • 4 cups filtered water
  • 4 pitted medjool dates or 1 tbsp of raw honey, pure maple syrup, or 1 packet of stevia
  • 2-3 tsp pure vanilla extract or 2 vanilla beans, chopped
  • a small pinch sea salt
Instructions
  1. Soak the nuts in a bowl of water for 6-8 hours or overnight.
  2. Strain and rinse the nuts.
  3. Put the water and and nuts in the blender and blend on high for about 30 seconds.
  4. Strain the milk through a nut milk bag into a large bowl. Save the pulp and make Almond Flour!
  5. Pour the milk back into the blender, add the sweetener, vanilla and salt.
  6. Optional: If you use dates or vanilla beans, strain through the nut milk bag again to avoid any remnants.
  7. Store in the fridge in a sealed container for up to 3 days.
  8. Alternative directions: Blend all ingredients in step 3, strain through the nut milk bag and store in the fridge. This method is easier, but if you plan on making almond flour it will have a sweet flavor and/or date remnants.

I highly recommend using a nut milk bag in step 4. I have this one from Amazon. Strainers and cheesecloths do not work as well and are much harder to use.

For Whole30 use vanilla beans - not vanilla extract.

*Truly raw almonds are no longer sold in North America (but can be purchased online). They are all pasteurized. The ones I buy are organic and the only ingredient is "Organic Steam Pasteurized Almonds." DO NOT use roasted almonds though! It will taste weird.

  • optional, 1 tbsp raw honey or pure maple syrup, 1 packet of stevia, or a few pitted dates
Instructions
  1. Soak the nuts in a bowl of water for 6-8 hours, or overnight.
  2. Strain and rinse the nuts.
  3. Place all ingredients in a blender and blend on high until smooth. About 30 seconds.
  4. Strain the milk through a nut milk bag into a large bowl.
  5. Store in a sealed container in the fridge. It will keep for about 3 days.

  • ½ cup fresh squeezed orange juice (takes about 2 large oranges)
  • optional: maple syrup, honey, or stevia, to taste
Instructions
  1. Soak the nuts in a bowl of water for 6 to 8 hours or overnight
  2. Strain and rinse the nuts.
  3. Place all ingredients in a blender.
  4. Blend until smooth, about 30 seconds.
  5. Strain through a nut milk bag.
  6. Store in a sealed container in the fridge for up to 3 days.

Bengal Spice Chai About 5 years ago I eliminated all caffeine sources from my diet – I even try to stay away from decaf. So, I am always on the hunt for new morning beverages and this is one of my favorites! It tastes like a cinnamon Iced Chai Tea Latte. This can also be served warm, I just prefer cold liquids.

ICed Chai above use This tea is also great served warm on a cold, winter night.

Bengal Spice Iced Chai Tea Latte (Caffeine Free)

Serves: 4 cups
 
Ingredients
  • 4 Bengal Spice tea bags
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup unsweetened almond milk, coconut milk, or other milk of choice
  • a dash of raw honey or stevia, optional
  • cinnamon sprinkled on top, optional
Instructions
  1. Pour the boiling water over the tea bags in a heat proof container. I use a mason jar and put the lid on it.
  2. Steep for 5 minutes, covered.
  3. Remove the tea bags.
  4. If using sweetener: add to the hot water before adding the cold liquids.
  5. Add 1 cup cold water and 1 cup unsweetened almond milk.
  6. Store in a sealed container in the fridge.
Notes
For a creamier treat use full fat coconut milk instead of almond milk.

Strawberry Watermelon Cocktail

Ingredients
  • fresh watermelon juice I just put the watermelon through my juicer
  • a few strawberries
  • ice or watermelon ice cubes
  • fresh mint or fresh basil, optional
  • a squeeze of lime, optional
  • a splash of vodka or tequila, optional
Instructions
  1. Muddle a few strawberries and basil or mint (optional) in the bottom of a glass.
  2. Add the watermelon juice and ice.
Notes
If you don't want so much fruit juice it tastes great with half watermelon juice and half sparkling water or Kombucha! Or just use all sparkling water with watermelon ice cubes.

If you have extra watermelon juice just make some Watermelon Ice Cubes - They are the best!
