1 tbsp of coconut flour, optional (This helps thicken the batter if you have trouble cooking Banana-Egg pancakes. The ones pictured above do not use this).

Instructions
Mash the banana in a medium bowl.
Add the eggs, coconut flour (optional), and vanilla (optional) and mix well with a whisk.
Cook on the stove just like how you would cook pancakes. Make sure to grease the pan first, I usually use ghee or coconut oil and I cook mine over medium-low heat.
Optional: top with cinnamon, fruit and/or maple syrup.

I have this pancake flipper from Amazon. It it the sole reason I am able to flip my Banana-Egg Pancakes and have them resemble actual pancakes!
