Line a baking sheet with parchment paper. On top of the parchment paper place a wire rack and spray with oil. This gets the fish crispy on both sides without having to flip it in the oven.
Cut the fish into two serving size fillets or small pieces for fish fingers.
Put the egg in one bowl and lightly beat it. Set aside.
In a separate bowl, mix the almond flour, ground flax, seasoning, and parsley (optional). Spread out on a large plate.
Dip the fish in to the egg and then coat it with the flour mix. Place on rack.
Bake for 15 minutes. Then, broil (on low) for about 3 minutes to brown the top and get it crispier. WATCH CAREFULLY - this burns easily under the broiler.
*I grind the nuts in my food processor. I find the fish gets much crispier using this method compared to almond meal or cashew meal, but it works with both.
