Sautéed Spinach

Ingredients
  • 6-ounce bag of spinach (Remember: it shrinks a ton after cooking)
  • 1 to 1½ tbsp coconut oil
  • sea salt and fresh pepper
Instructions
  1. Heat the oil in a large sauté pan for a minute.
  2. Add the spinach.
  3. Cook over medium heat for about 5 minutes, stirring occasionally so it cooks evenly. You know it's ready when all the spinach has wilted.
