Instructions
Mash the banana in a bowl.
Add the eggs, poppy seeds, lemon zest, and flour (optional). Mix well with a whisk.
Grease the pan with coconut oil or ghee and cook on the stove just like normal pancakes. I cook mine over medium-low heat.
Optional: Top with blueberries.
