Mushroom Cauliflower "Mashed Potatoes"

Ingredients
  • 1 medium head cauliflower
  • ½ lb mushrooms, chopped
  • 2-3 tbl ghee, divided
  • 6 cloves of garlic, minced
  • a generous sprinkling of onion powder
  • ½ small lemon, juiced
  • 1 heaping tsp dried parsley or 1 heaping tbsp fresh parsley
  • sea salt, to taste
  • fresh pepper, to taste
Instructions
  1. Steam the cauliflower florets until soft.
  2. Place the steamed florets in a food processor and blend until smooth. They should look and have a texture similar to mashed potatoes.
  3. Heat 2 tbl of ghee and garlic in a large skillet. Cook over medium heat for a minute or two.
  4. Add the chopped mushrooms, onion powder, salt, and pepper. Cook over medium heat for 5-10 minutes, until the mushrooms are soft.
  5. Add the parsley, lemon juice, 1 more tbl of ghee (optional) and cauliflower. Mix together and heat for a minute or two over low heat.
  6. Taste and add more seasoning as needed.
