Ahi Tuna Horizontal

Sesame Crusted Ahi with Ginger Garlic Sauce

Serves: 3
 
Ingredients
  • 1 lb sushi grade ahi tuna
  • sea salt, to taste
  • fresh pepper, to taste
  • 3 tbsp white sesame seeds
  • 3 tbsp black sesame seeds
  • sliced avocado, optional
  • arugula, optional
  • Ginger Garlic Sauce:
  • ½ tbsp finely chopped fresh ginger
  • 1 tbsp minced garlic
  • 1 tbsp coconut oil
  • ½ cup coconut aminos
Instructions
  1. Season the tuna with salt and pepper.
  2. Mix the sesame seeds together and pour onto a plate.
  3. Coat the tuna in sesame seeds. Set aside.
  4. Heat a greased pan over medium heat for about 5 minutes. I spray mine with Avocado Oil in my Misto Sprayer.
  5. Place the tuna on the (hot) pan and cook for 2 minutes per side.
  6. Remove from heat. Slice and serve. I serve it over a bed of arugula with sliced avocado.
  7. For the sauce: Place all ingredients in a small pan and cook over medium heat for about 3-5 minutes, or until heated through and simmering.
Notes
Pictured above with grilled asparagus. I make the Ahi using a large grill pan and use half for the asparagus and half for fish.

Pesto 2 Artichoke This is probably my favorite recipe on the site! I was making it long before I was paleo and eat it on pretty much everything – eggs, fish, veggies, zoodles, cauliflower pizza…I never seem to get sick of it.

Nut-Free Artichoke Pesto

Ingredients
  • 1 10oz jar of artichoke hearts, not soaked in oil, drained
  • basil (about 2 cups packed, or more to taste) - Instead of, or in addition to, the basil you can try kale, arugula, asparagus, or dandelion root.
  • 1-3 cloves of garlic, optional
  • ¼ to ⅓ cup extra-virgin olive oil
  • 1 small lemon, juiced
  • pepper, to taste
Instructions
  1. Mix all ingredients in a food processor until smooth.
  2. Store in a sealed container in the fridge for up to 14 days.

Paleo Mayonnaise & Horseradish Mayonnaise

Serves: ¾ cup
 
Ingredients
  • All ingredients at room temperature:
  • 1 large egg yolk
  • ¼ tsp sea salt
  • 1 tsp Annie's Organic Dijon
  • 2 tsp fresh lemon juice
  • 1 tsp white vinegar
  • ¾ (not extra virgin) olive oil
  • fresh pepper, optional
  • For Horseradish Mayonnaise: 2-3 tbsp fresh grated horseradish
Instructions
  1. Place egg yolk, salt, dijon, lemon juice, and vinegar in the bottom of an immersion blender cup. See Video above for the rest or read below...
  2. Add the oil.
  3. Place the head of the immersion blender in the cup so it hits the bottom and blend on high until mayo forms. About 15 seconds. Slowly (while still on) remove the immersion blender from the cup.
  4. For horseradish mayonnaise: add the horseradish, put the immersion blender back in and pulse a few times to combine.
  5. Season with fresh pepper (optional) and more salt, if needed.
  6. Store in a sealed container in the fridge for up to two weeks.

Dill Green Goddess Dressing 2

Dill Fine Herb Dressing

Serves: about ¾ cup
 
Ingredients
  • All ingredients at room temperature:
  • 1 large egg
  • ½ cup extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 2 tbsp Annie's organic dijon
  • 3 garlic cloves
  • ¼ tsp sea salt
  • 1 tbsp lemon juice
  • ½ cup packed fresh basil
  • 2 tsp fresh oregano
  • 3 tbsp packed fresh dill
  • pictured above on a spiralized cucumber with sliced tomatoes and kalamata olives
Instructions
  1. Mix the egg using an immersion blender in a tall container.
  2. Add the oil, slowly, and continue mixing with the immersion blender.
  3. Add the vinegar, dijon, garlic, salt, and lemon juice. Mix with the immersion blender until well blended and thick.
  4. Add the oregano, basil, and dill. Pulse the immersion blender until well mixed.
  5. Store the extra sauce in a sealed container in the fridge for up to 3 days. I would not keep it much longer due to the raw egg.
Notes
This dressing tastes great on fish, vegetables or salads.

  • 9 tomatoes, diced, seeds removed
  • 1 yellow onion, diced
  • 3-4 serrano peppers or jalapeños
  • 1/2 tbsp garlic, minced, optional
  • 1/2 to 1 bunch of cilantro, finely chopped, optional
  • 2 key limes, juiced
  • sea salt, to taste
  • plantain chips, optional
Instructions
  1. Just mix all the ingredients in a bowl.
Notes
Goes great with Plantain Chips.

Salmon with a Puttanesca Sauce

Serves: 4
 
Ingredients
  • 4 wild salmon fillets (about 6oz/person)
  • optional, 1 red pepper, sliced
  • optional, 1 cucumber, spiralized or sliced finely
  • Puttanesca Sauce
  • 2-4 cloves garlic
  • ½ cup sun-dried tomatoes, not packed in oil
  • 3 medium tomatoes, chopped coarsely (seeds removed)
  • ½ red onion, chopped coarsely
  • 1 heaping tbsp capers
  • 1 tsp dried parsley
  • 2 tsp dried oregano
  • 1 heaping tsp dried basil or 1 heaping tbsp fresh basil or a layer of Artichoke Pesto (pictured above)
  • ½ tsp red pepper flakes or a sprinkling of cayenne
  • ¼ cup green olives, pitted
  • ¼ cup kalamata olives, pitted
  • optional, ¼ cup roasted red peppers
Instructions
  1. Preheat oven to 415F.
  2. Place all ingredients for the sauce in a food processor.
  3. Pulse until all ingredients are blended, but still chunky.
  4. Place salmon fillets on a sheet of greased parchment paper. Bake for about 15 minutes (adjust time as needed depending on the thickness of the fish).
  5. While the salmon is baking, cook the puttanesca sauce in a saucepan over medium-low heat for about 10 minutes.
  6. Optional: Sauté the red pepper in coconut oil in a saucepan over medium heat for about 10 minutes.
  7. Remove the salmon from oven. Place over a bed of spiralized cucumber and sautéed red pepper (optional).
  8. Add a few spoonfuls of sauce and ENJOY!
