Dill Green Goddess Dressing Easy. Refreshing. Crunchy Goodness.

Dill Green Goddess Dressing 2

Dill Fine Herb Dressing

Serves: about ¾ cup
 
Ingredients
  • All ingredients at room temperature:
  • 1 large egg
  • ½ cup extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 2 tbsp Annie's organic dijon
  • 3 garlic cloves
  • ¼ tsp sea salt
  • 1 tbsp lemon juice
  • ½ cup packed fresh basil
  • 2 tsp fresh oregano
  • 3 tbsp packed fresh dill
  • pictured above on a spiralized cucumber with sliced tomatoes and kalamata olives
Instructions
  1. Mix the egg using an immersion blender in a tall container.
  2. Add the oil, slowly, and continue mixing with the immersion blender.
  3. Add the vinegar, dijon, garlic, salt, and lemon juice. Mix with the immersion blender until well blended and thick.
  4. Add the oregano, basil, and dill. Pulse the immersion blender until well mixed.
  5. Store the extra sauce in a sealed container in the fridge for up to 3 days. I would not keep it much longer due to the raw egg.
Notes
This dressing tastes great on fish, vegetables or salads.

Caesar This Caesar Salad is pretty much the only salad I ever eat. I love it so much I perfected a much smaller (lower calorie) version of it. This is a staple in my diet – I never get sick of it.

Caesar 2_new

Paleo Caesar Salad for 2
Author: 
Serves: 2
 
Ingredients
  • 1 head of romaine lettuce, chopped
  • 1 anchovy, chopped finely, optional
  • ½ tbsp garlic, minced
  • ½ tbsp dijon
  • a little less than a tsp of worcestershire*
  • ½ small egg yolk
  • 2 tbsp extra virgin olive oil
  • juice of ½ small lemon, or more to taste
  • a little less than ½ tbsp red wine vinegar
  • fresh pepper, to taste
  • Croutons, optional
Instructions
  1. Place anchovies (optional), dijon, and fresh garlic in a large bowl. Mix with a fork.
  2. Add the egg and worcestershire and mix with the fork.
  3. Slowly add the olive oil while stirring with the fork.
  4. Add the lemon juice, vinegar and fresh pepper. Mix with the fork.
  5. Mix in the lettuce.
Notes
*I still use Lea & Perrins original worcestershire sauce. It is gluten free, but does contain added sugar/molasses. Since this recipe uses such a small amount I do not worry about it. Here is a 100% Paleo/Whole30 option.

This dressing contains raw egg and should be consumed within 24-48 hours.

Caesar One of my all time favorites! The reason you do not see many salad dressing recipes on my site is because this is the only one I ever make! If you have never made a homemade Caesar dressing before you do not understand the amazingness you are missing out on. I make this salad weekly.

Paleo Caesar Salad

Ingredients

  • 1 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • fresh pepper, to taste

  4. Add the lemon juice, vinegar and fresh pepper. Mix with the fork.

For a lower calorie version: Cut the olive oil in half, use a small egg yolk, a whole small lemon (juiced), a little less than ½ tbsp worcestershire and about ½ tbsp red wine vinegar.

Jícama Fruit Salad
Jícama Fruit Salad

Ingredients
  • ½ a jícama, peeled
  • 1 medium apple
  • 1 medium pear
  • 2 kiwis, peeled
  • strawberries, to taste
  • juice of 2 oranges
  • juice of 2 limes
  • any other fruit or vegetables you would like to add - I also look cucumber, mango, or blueberries.
Instructions
  1. Shred the jícama and apple. I use my food processor with the shredding blade.
  2. Dice the strawberries, kiwis and pear.
  3. Mix all ingredients together in a large bowl. Drizzle with lime and orange juice.
