Ahi Tuna Horizontal

Sesame Crusted Ahi with Ginger Garlic Sauce

Serves: 3
 
Ingredients
  • 1 lb sushi grade ahi tuna
  • sea salt, to taste
  • fresh pepper, to taste
  • 3 tbsp white sesame seeds
  • 3 tbsp black sesame seeds
  • sliced avocado, optional
  • arugula, optional
  • Ginger Garlic Sauce:
  • ½ tbsp finely chopped fresh ginger
  • 1 tbsp minced garlic
  • 1 tbsp coconut oil
  • ½ cup coconut aminos
Instructions
  1. Season the tuna with salt and pepper.
  2. Mix the sesame seeds together and pour onto a plate.
  3. Coat the tuna in sesame seeds. Set aside.
  4. Heat a greased pan over medium heat for about 5 minutes. I spray mine with Avocado Oil in my Misto Sprayer.
  5. Place the tuna on the (hot) pan and cook for 2 minutes per side.
  6. Remove from heat. Slice and serve. I serve it over a bed of arugula with sliced avocado.
  7. For the sauce: Place all ingredients in a small pan and cook over medium heat for about 3-5 minutes, or until heated through and simmering.
Notes
Pictured above with grilled asparagus. I make the Ahi using a large grill pan and use half for the asparagus and half for fish.

Green Salmon New

Salmon with Roasted Veggies and a Dill Fine Herb Sauce

Ingredients
  • 1 white sweet potato
  • coconut oil
  • sea salt
  • fresh pepper
  • salmon (about 6oz/person)
  • 1 bunch of asparagus
  • cherry tomatoes
  • radishes
  • Dill Fine Herb Dressing
  • arugula, optional
  • fresh lemon, juiced, optional
Instructions
  1. Preheat the oven to 425F.
  2. Peel and dice the sweet potato. Mix with a splash of coconut oil, sea salt, and fresh pepper.
  3. Place the potatoes on a parchment paper lined baking sheet.
  4. Bake for 35-40 minutes, or until soft and lightly browned. Toss the potatoes every 15 minutes so they cook evenly.
  5. Place the salmon on a piece of greased parchment paper on a baking sheet or you can grill the salmon. I don't season the fish because everything else has so much flavor.
  6. Trim the asparagus and cut into 1-inch pieces. Season with sea salt, fresh pepper, and a splash of coconut oil.
  7. After the potatoes have been in the oven for 20 minutes, place the salmon on the top rack and add the asparagus to the tray of potatoes. Bake the salmon for 15 minutes (more or less depending on thickness). Bake the asparagus for about 15 minutes, or until tender. Everything should be done at about the same time.
  8. While the salmon and vegetables are cooking, slice the radishes and tomatoes.
  9. Remove the vegetables and fish from the oven.
  10. Place the potatoes, asparagus, tomatoes and radishes on a plate. Drizzle with the sauce. Add the salmon. Drizzle with a little more sauce and a sprinkling of tomatoes and radishes. Top with arugula (optional) and fresh lemon juice (optional).

Shrimp Cocktail 2

Paleo Cocktail Sauce

Ingredients
  • ½ cup Bionaturae organic crushed tomatoes
  • 1 tbsp Bionaturae organic tomato paste
  • 2 heaping tbsp of prepared horseradish, or more to taste - double check the ingredients on the horseradish - not all are paleo/whole30 compliant
  • ½ tbsp fresh lemon juice
  • ¼ tsp sea salt
  • 1 tsp worcestershire sauce*
Instructions
  1. Whisk all ingredients in a bowl and store in the fridge.
Notes
*I still use Lea & Perrins original worcestershire sauce. It is gluten free, but does contain added sugar/molasses. Since this recipe uses such a small amount I do not worry about it. Here is a 100% Paleo/Whole30 option.

Baked Shrimp with a Spicy Herb Ghee Sauce

Serves: 4
 
Ingredients
  • 1 lb raw shrimp
  • ¼ cup ghee*
  • 4 garlic cloves, minced
  • 2 tsp dried parsley or about 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh lemon juice
  • 1 tbsp Perfect Seasoning
  • Served over Cauliflower Rice or Parsnip Rice, sautéed peppers and steamed broccoli, optional
Instructions
  1. Preheat oven to 400F.
  2. Peel and devein the shrimp. Remove the tails. Rinse and pat dry.
  3. Place shrimp in a small glass baking dish in a single layer so they fit snuggly.
  4. Sauté the ghee, garlic, parsley, lemon juice, and spicy seasoning in a small sauce pan over low heat for 2-3 minutes to combine all the flavors and heat through.
  5. Pour the mixture over the shrimp.
  6. Bake for 20 minutes. Flip shrimp over halfway through and baste with the sauce.
Notes
I also love these shrimp over Pesto Zoodles.

I prefer this sauce with ghee, but if you do not eat ghee feel free to substitute coconut oil.

If i'm in a rush sometimes I just sauté the shrimp in the ghee sauce in a large pan. The flavor tastes better baked, but this method works also.

Spicy Cumin Baked Halibut

Ingredients
  • halibut fillets (6-8 oz/person)
  • 1.5 tsp of Cumin Seasoning Mix per fillet
  • ½ tsp ghee or coconut oil/fish fillet
  • Bruschetta for topping, optional
Instructions
  1. Preheat oven to 425F.
  2. Spread a little ghee (or coconut oil) on each fillet.
  3. Generously sprinkle the seasoning over each fillet (about 1.5 tsp/fillet).
  4. Bake for about 12 minutes (more or less depending on the thickness of the fish).
