Paleo Waffles (Only 3 Ingredients)

Serves: 1 large waffle or 2 small
 
Ingredients
  • 1 banana
  • 2 tbsp coconut flour
  • 1 egg + ¼ cup egg whites or 2 eggs
  • Optional: a splash of unsweetened coconut or almond milk
Instructions
  1. Using a fork, mash the banana in a medium mixing bowl.
  2. Add the coconut flour and eggs and mix well with a whisk or electric hand mixer.
  3. Cook in your waffle maker - mine takes 4 minutes.
Notes
For Lemon Poppyseed Waffles add 1 heaping tsp of poppy seeds and the zest of 1 lemon.

Angel Hair Sweet Potato Pasta with a Savory Sage Sauce

Ingredients
  • 1-2 tbsp ghee (Vegan: use extra virgin olive oil)
  • 1 large sweet potato
  • a sprinkle of onion powder
  • a sprinkle of garlic powder
  • a sprinkle of sea salt
  • a very generous sprinkling of dried or fresh sage
Instructions
  1. Cut the sweet potato into noodles. I use a julienne peeler. A spiralizer or mandoline slicer would also work well.
  2. In a medium saucepan, melt the ghee for a minute over medium heat.
  3. Add the rest of the ingredients and cook for about 10 minutes. Keep stirring so they cook evenly and do not burn.
  4. Optional: top with a fried egg.

3-Ingredient Mint Chocolate Chip Ice Cream

Ingredients
  • 1 frozen banana, cut into chunks
  • 2 or 3 drops of Simply Organic peppermint extract
  • 2 tbsp dark chocolate chips or chopped Dark Chocolate (I use Theo Organic 85% Dark Chocolate. For 21DSD use cacao nibs or 100% dark chocolate).
Instructions
  1. Remove the banana from the freezer and let thaw for 15 minutes.
  2. Blend the banana in a food processor for up to a minute until it looks like soft serve ice cream. You may need to scrape down the sides once or twice. If it is not blending easily or if it is forming small chunks just let it thaw another 5 minutes.
  3. Add the mint and chocolate to the food processor and pulse a few times until well mixed.

35 Calorie Banana Bread Cookies

Ingredients
  • 1 ripe banana, mashed
  • 1 egg and ¼ cup egg whites
  • 2 tsp coconut oil or ghee, melted
  • 1 tsp pure vanilla extract
  • 1 heaping tsp cinnamon
  • 2 tbsp coconut flour
  • 1/4 tsp ground ginger, optional
  • ¼ tsp ground nutmeg, optional
  • optional add ins: chocolate chips, raisins, dates, shredded coconut...
  • pictured above with Banana Almond Milk
Instructions
  1. Preheat oven to 350F.
  2. Place a greased piece of parchment paper on a baking sheet. I grease it with coconut oil.
  3. Mash the banana in a bowl with a fork.
  4. Add the egg, ghee, and vanilla and mix well with a whisk.
  5. Add the flour, cinnamon, ginger (optional), and nutmeg (optional). Mix until well combined.
  6. Place spoonfuls of dough on the parchment paper.
  7. Bake for about 20 minutes, or lightly browned on top.
  8. The cookies have a soft texture. If you would like them crispy place them under the broiler at the end for a few minutes. WATCH CLOSELY - They burn easily under the broiler.

Paleo Gluten Free Crepes

Serves: 6 Crepes
 
Ingredients
  • 2 eggs + ¼ cup egg whites
  • 3 tbsp almond milk or coconut milk
  • 1 tsp avocado oil or extra virgin olive oil
  • ½ cup arrowroot flour or tapioca flour
  • 1 heaping tbsp almond flour or coconut flour
  • 2 tsp pure vanilla extract
  • 1 packet of stevia, or other sweetener to taste
Instructions
  1. Mix all ingredients in a blender.
  2. Heat a 10" fry pan over medium heat for about 3 minutes. I use a nonstick fry pan and find that it does not need to be greased.
  3. Turn the heat down to low and pour 3-4 tbsp of batter into the pan. Spread it around so it covers than pan.
  4. Cook for 30 seconds to 1 minute per side. The edges of the crepe will pull away from the pan and it should be extremely easy to flip.
  5. To store: Let them cool completely and place in a sealed container in the fridge. They last about 5-7 days.
Notes
You can use any size pan to cook these - it just depends how big or small you want them.

I like mine filled with fruit, cinnamon, Coconut Milk Whipped Cream and Chia Jam.

Fruit Popsicles

Serves: 5-6 popsicles
 
Ingredients
  • 10 ripe strawberries
  • 2 mangoes
  • 2 kiwis
Instructions
  1. Peel and slice the kiwis. Set aside.
  2. Blend the strawberries until smooth. If they are not blending easily add a tiny splash of water or almond milk.
  3. Pour the strawberry mixture into the popsicle molds, filling them up halfway. Add a slice of kiwi. Freeze for about 2 hours.
  4. Blend the mangoes until smooth.
  5. Pour the mango mixture on top of the strawberries. Add a slice of kiwi. Add the sticks. Freeze for about 4 more hours, or until set.
  6. To remove from the molds I run mine under hot water for about 30 seconds.
