Ahi Tuna Horizontal

Sesame Crusted Ahi with Ginger Garlic Sauce

Ingredients
  • 1 lb sushi grade ahi tuna
  • sea salt, to taste
  • fresh pepper, to taste
  • 3 tbsp white sesame seeds
  • 3 tbsp black sesame seeds
  • sliced avocado, optional
  • arugula, optional
  • Ginger Garlic Sauce:
  • ½ tbsp finely chopped fresh ginger
  • 1 tbsp minced garlic
  • 1 tbsp coconut oil
  • ½ cup coconut aminos
Instructions
  1. Season the tuna with salt and pepper.
  2. Mix the sesame seeds together and pour onto a plate.
  3. Coat the tuna in sesame seeds. Set aside.
  4. Heat a greased pan over medium heat for about 5 minutes. I spray mine with Avocado Oil in my Misto Sprayer.
  5. Place the tuna on the (hot) pan and cook for 2 minutes per side.
  6. Remove from heat. Slice and serve. I serve it over a bed of arugula with sliced avocado.
  7. For the sauce: Place all ingredients in a small pan and cook over medium heat for about 3-5 minutes, or until heated through and simmering.
Notes
Pictured above with grilled asparagus. I make the Ahi using a large grill pan and use half for the asparagus and half for fish.

Cashew Cheese After trying Cashew Cheese many times I thought it was horrible – borderline inedible. However, I realized I just loathe the flavor of nutritional yeast. This recipe does not use any and I think it tastes absolutely wonderful.

Cashew Cheese 1 One of the only foods I miss following a Paleo diet is Fresh Mozzarella. Unfortunately, dairy (especially cheese) causes a whole host of problems for me, so I stay away from it all the time. I can’t say this cheese is as good as fresh mozzarella, but it is way better than I ever expected cheese made from nuts could be! Pictured above with Paleo Focaccia and above top with Sun Dried Tomatoes, Basil, Oregano, and Extra Virgin Olive Oil.

Cashew Cheese Shredded As you can see from all the pictures, the options of what to do with this are endless! I like shredded the best. Cashew Cheese does not really melt, so you can’t make true quesadillas. But I love it wrapped up in a Tortilla with Pico de Gallo.

Paleo Vegan Garlic Cheese
Author: 
Serves: About 2 cups
 
Ingredients
  • ½ cup cashews
  • 2 tsp onion powder
  • 1 tbsp garlic powder or garlic granules - This cheese is pretty garlicy. Adjust as necessary.
  • 1 tsp sea salt
  • 1.5 cups unsweetened almond milk
  • ½ cup agar flakes
  • ¼ cup coconut oil
  • 1 tbsp lemon juice
  • any other fresh or dried herbs you like: basil, chives, dill, oregano...
  • If you like nutritional yeast feel free to add up to ¼ cup of it when you mix in the other seasonings in step 2.
Instructions
  1. Place the cashews in a food processor. Pulse until very finely chopped, but not a paste.
  2. Add the onion, garlic powder, and any other fresh or dried herbs (optional). Pulse a few times to mix it in.
  3. Heat the coconut oil, agar flakes, and almond milk in a large sauce pan over high heat until bubbling around the edges. Turn the heat down to low and simmer for 10 minutes, stirring occasionally until all the agar flakes have dissolved.
  4. While the food processor is running, slowly pour the almond milk mixture in through the feeding tube on the top. Blend for 1 minute until well mixed, scraping down the sides if necessary.
  5. Add the lemon juice and blend for another minute to combine.
  6. Pour into 2 small, round, pyrex containers, cover, and place in the fridge for 5 hours or overnight.
  7. For Shredded Cheese: Just grate the block of cheese when you remove it from the fridge.
  8. This cheese can be stored in a sealed container in the fridge for up to 4 days.

Paleo Vegan Zucchini Pizza Crust

Serves: Makes 2 (7-inch) Pizzas
 
Ingredients
  • 2 medium zucchinis
  • ¼ tsp sea salt
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ½ tsp garlic powder/granules or 2 garlic cloves, minced
  • ½ tsp dried rosemary
  • fresh pepper, to taste
  • a few shakes of red pepper flakes, to taste
  • ½ cup almond flour or coconut flour
  • 2 eggs (Vegan: use flax eggs)
  • Toppings of choice (Pre-cook any meat or veggies (that need it) before adding them to the pizza)
  • pictured above with No Bean Hummus and Artichoke Pesto
Instructions
  1. Preheat oven (with a pizza stone in it if you have one) to 450F.
  2. Cut the tops and bottoms off the zucchinis.
  3. Shred the zucchinis. I use the shredding attachment on my food processor.
  4. Steam the shredded zucchini for a few minutes OR microwave for 1 minute.
  5. Remove from the steamer or microwave and pour onto a kitchen towel.
  6. Once it has cooled off enough to handle, use the kitchen towel or a nut milk bag to squeeze as much water out of the zucchini as possible. Once you think you are done, squeeze more. This is the most important step to get a crispy crust.
  7. Mix the zucchini with the rest of the ingredients in a medium bowl.
  8. Place a greased piece of parchment paper on a baking sheet.
  9. Form the "dough" into 2 (7") pizzas.
  10. Bake for 15-20 minutes, or until the edges are brown.
  11. Remove from oven and add your (pre-cooked) toppings. Then put the pizza back in the oven under the broiler, on low, for about 3 minutes, or until everything is heated through. WATCH CLOSELY! Things can burn very easily under the broiler.
Notes
You do not have to use nut flour in this recipe if you don't mind eating it with a fork and knife - it just helps with the texture. For Whole30 I just use 1-2 tbsp flour.

This crust can be made ahead of time and stored in a sealed container in the fridge for a few days.

If you are having trouble getting the crust crispy:
-Make sure you are getting enough water out in Step 6. A nut milk bag works way better for me than a kitchen towel.
-Use a pizza stone if you have one.
-Make sure to pre-cook any veggies that need it.
-If you are still having trouble you can always add more nut flour.
